When putting the 8 Spyder diff together, do I have to use two big O rings (for the diff cap and ring gear)( like the one that goes around the diff cap to seal it) or just one?

You have to use both so seal against the ring gear and cup and the front cap and the cup.

Here's the rear hybrid bulk with the knuckle head shock tower( had to do some filing to the top of the hybrid to make the shock tower fit):
