I would say that it should be fine at 35mph, and a big step up from the 7700.

Thanks, i don't use connectors i directly solder the wires from the motor to the esc does that make a difference?

does weight matter with the torque of the motors?

Direct soldering is a good idea, it eliminates the connectors, which can cause problems.

If you have a motor that is undersized for the weight of the truck it will have to work too hard and will get quite hot. Generally a larger motor will stay cooler longer.
