UBEC/tapping from 4s w/balance tabs?
 

So, I could always use a UBEC...

Though, let's say I wanted a 7.4v output (at about 3amps) could I just tap directly off of the balancing tab? I understand that servos may not be rated for 7.4v, but that's beside the discussion. The question is just - can I pull 2S (7.4v) voltage (at 2-3amps) from the balancing tabs?

you could... but it's not too good for the lipos... it will make the cells off balance... .. but it wouldn't be 7.4Vs.. it would be over 8.0 Volts...

Ohh duh. Okay yeah I should have thought of that. :)

So my nest question is.. Are there any voltage regulators/UBECs that output 7-8v instead of 5/6?

The castle creations bec can go up to 9.6v.

I would't use the balancing tabs for this purpose, rather take a castle ubec..
