Hi OzDave.
You are right in that you can connect the 3 wires to eachother in any order, if the motor runs backwards swaping any 2 of the 3 will get it spining the right way.
Brushless motors are non-directional, all the timing is handled by the ESC if you swap 2 wires as above it will run exactly the same in both directions.
My only car ESC the Mamba Max came with the correct servo reversing for my transmitter so I didn't try swaping it, some of my Plane ESCs have needed servo reversing and all that happened is that my stick worked the wrong way round before I switched it over. I wont say none are directional tho as maybe some that I haven't tried are, maybe somone with experiance of your particular ESC will chime in.
I use a dremmel with a grinding disc to put a flat on the motor shaft, when doing this make sure you have tape/cling film or something of the sort over the holes in your motor and especialy around the base of the shaft, otherwise the magnets inside the motor will pull the swarf/iron filings down the shaft and into your bearings.
