That makes the most sense to me. Even if a LVC of 2.2v/cell is selected, the ESC still will calculate the number of cells based on what it assumes to be fully charged lipo cells.

For this reason, I would like to see LVCs rated for whole pack voltages, not cell voltages. So, you would just set the terminating voltage (15v for 5s, 12v for 4s, 6v for 3s, etc) to eliminate the errors from the ESC miscalculating cell count. Of course, then the user has to know what they are doing...
