I too have been thinking of ways to implement a simple "tank mode" setup. The best I could come up with is use one ESC and a regular diff on the drive axle, but brake discs/pads on each wheel. Hook the brake servos to the steering channel. When you steer left, the left brake activates. When you steer right, the right brake activates. The diff will take care of the rest.
