No, do not mix lipo and NiMH!

I would desolder the existing Deans and reuse them. 12GA wire is pretty thick so the normal 20-30w soldering irons you find at Wal-Mart may be a bit weak to get the job done right. It is possible, just takes longer. And make sure you do NOT get plumbing solder (acid core). You need rosin core. RadioShack would be a better bet to get the stuff you need, or better yet, your LHS.

And to get an idea how a single Deans should look on that ESC, here's a pic of my Slash:
