lol, first of all, at the current levels you will be pulling to achieve those speeds, the lipos will not be 4.2v/cell very long at all. And second, rpm limit is determined by the motor bearings, how the rotor is built, and to some extent, the ESC.
Use high quality bearings and make sure the motor you pick has a wrapped rotor and you should be fine. At ~60k rpm, anything can go wrong no matter what brand it is.
IIRC, the Pletty is a 6 pole motor. I'm not sure what the MMM ESC is rated for rpm-wise on a 6 pole motor. As far as which motor can rev higher, I can't say. I know Nic Case uses Neu motors and routinely reaches those rpm levels and they hold up.
