If you set your throttle EPA to 10%, and then calibrate the ESC, the ESC will output full power when you are only pulling the trigger a tiny bit (10% of the total range of motion). In effect you will just be killing the resolution of your throttle control (amount of "steps" between 0% and 100%).
As far as throttle punch, both the ESC and transmitter can have settings for that. I think it would be best to set the throttle punch control on one device (most likely ESC) and leave it alone on the other device (Tx).
