It's not the voltage (6s, 8s) that kills esc's it is amperage. Whether you run 6s or 8s it seems to take about 5000 watts or more to launch a baja that is geared for 50mph, that is just how much power it takes to get it moving.
At 6s (22.2v) 5000 watts is 225 amps (5000/22.2)
At 8s (29.6v) 5000 watts is 169 amps (5000/29.6)
You can see that 8s has the same power, but flows less current(amps).
It is harder on the esc to run lower voltage.
However, since you would be changing the gearing that would lessen the load, making it okay to run 6s.
So, in short, yes you can run 6s if you gear low like you mentioned, but there is no reason not to run 8s and use your esc to it's full potential.
