Aluminum works well for me. If you use better-grade 1/16" thick aluminum like 6061-t6, you can bend it (without stress cracks), relatively light, strong, and has the added benefit of acting like a heat sink for certain ESC applications (like the Quark).

From the little work I've done with CF, it is also easy to work with as far as cutting and sanding, but you have to have any bends pre-determined...
