FM means
Frequency
Modulation. AM (most stock radios, like Traxxas ones) means
Amplitude
Modulation. This refers to the way the actual signals are superimposed (modulated) onto the radio carrier frequency. AM is prone to noise which results in reduced range and glitches. FM is much better than AM for noise rejection and therefore range, but the circuitry in more complex (but not by much really). The crystals you use select the channel for both AM and FM but the actual frequencies are different.
There is another radio type, frequently called digital, which is found in radios like the Spektrum and Nomadio. The actual frequency is usually in the low GHz (as opposed to the MHz range for AM and FM) so there is less chance for motor and general "white" noise from affecting the signal.
