Steel pinion with steel spur will make noise, especially coupled with a motor like a MedUsa that has such a powerful magnet (hence the notchiness in it). Perfectly normal.

What are your temps like after the run? If your temps are all good you could step up a tooth or two if you want.

The steering servo is sufficient if it works for you. If it turns too slow get something with more torque and a faster time. I have a Hitec HS-985MG and it's more than enough servo for my Hyper 7.

Settings on the MMM are up to you, but you could turn up the punch control a little to keep amp spikes down and make it more drivable. I usually run normal timing on 4 pole motors, lowest on 2 polers.
