But yes I believe this can and has been done - Get the rotors in sync and locked with gearing it can work

Yes, I have done that on many occasions and I can even explain how it works and why.

There is nothing to capture here...

And nicely matched two plettenbergs would be not a problem for ESC to run in sensoreless mode.
