I run 2 40mm fans on 18v.... they are fine and havent even heated up, let alone fry

Do you run 5V fans in series? fans act like resistor if it series every fan takes about ~9V. 5V fan can run some time on 9V but definatly not long, lifetime will drop dramaticaly. But run 5V fan on ~16V will fry them for sure. Running 5V fans trough UBEC is OK!

I run 12V 30mm fan on my MM on 4S lipo which is fully charged 16,8V and fan is OK. Maybe it will have shorter lifetime but who care because it works on hard environment anyway dust/Rocks/Vibration it will fails soon anyway.
