Have you thought of eliminating the steering servo as a source of the problem? Bad ones can make ESCs do some funky things.

I tried different servos last night, solar d772, orion, ae s200mg, traxxas 2055, 2018, I tried a couple others too. They all did the same thing. I tried driving it again and playing withdifferent pinion gears from 10,12,13,14,16 and none of that helped. I'm still very cautious when I try driving it because I'm scared its gonna let the magic smoke out and damage the rest of my rig in doing so.

Also forgot to mention I added a brand new castle 10a bec to see if that helped. It reluctantly did not.
