Hey jhautz, here's what I would do:
-check if the UBEC is really giving 6V
-make sure the servos are not fighting each other.

If you are sure on the voltage, and the servo centers are fine, then disconnect the servos from the steering assembly and try if you still have the same problem. If yes, you might just have a bad servo. Would be a good opportunity to upgrade to a single servo.
