I run a 8000Kv mamba and I used to have big problems with heat, and I have hit 200 deg before. First step was to get a heat sink on the can:

The model is an EFLM 1912. It fits perfect and is cheap. I have it on the motor so the fins hang out the hole in the bottom in the breeze. I had to bend the fins slightly to be able to get some clearance to set the mesh properly, but that's a very simple process. Looks like this:



However, even that didn't solve the heat problem. Turns out it was a very simple thing, I was still running the original metal-sealed bearings. They ran pretty good, but they were a bit crunchy. At the speeds these things run (see my recent vid in this forum) it takes very little resistance to build lots of heat. I replaced my stockers with a set from fullforcerc and my temps went WAY down. I can run hard as I want with the 3S now and after the run I can rest my finger comfortably on the heatsink for as long as I want. I doubt it's much over 110 - 120 now. Before, I would have burned myself. They have the bearing set on sale now, for $11...it's quite the deal.
