Well, a non-sensored motor is run by a non-sensored esc by sensing the back emf while firing the individual phases (I do not really understand this on a level to make electronics, but it is a method of determining the rotor position). With that info it can adjust the timing and other important parameters.
A sensored motor uses a hall sensor to determine the rotor position.
So any non-sensored esc can run any motor, with or without a sensor. A sensored esc can only run a sensored motor.
