Those kv values are recommended motors, not limits.
When an esc does have a kv limit it has to do with how many times the phases switch, and a 4 pole motor switches twice as much as a 2 pole motor. So if it had a limit of a 3000kv 4 pole, it could handle a 6000kv 2 pole.
Your 6.5 is a 2 pole, so no worries

And if I wanted to run it with something like a 3500 or a 3800 I'd be okay? I have had recommendations to run a 3800 in my p2de, which is now running a 5700(which likes to get hot). I think that was a castle motor, but I'm not sure. Would it also run something like that? Sorry guys, I'm full of questions.

Money is all spent for now, but I wanna save up for a 2200 or 2650 kV motor.
I'd like to run 3s or 4s. 3s would be nice for weight savings.
I'd like around 50 mph and torque for wheelies. Would either motor accomplish these goals geared for pede or maxx tires and stay cool and do it on 3s? On 4s?
50mph on 3s in a maxx? No. Your stuff would get way too hot, probably wouldn't even do 50 if geared for it. (probably not room for the gears either) in a pede yeah. Go for the 2200kv. If you want 50mph and wheelies you probably need 5s to stay reliably cool.
Can the 6.5 be geared a little less conservatively on the mmm? The mmm I bought taken out of an xo1. It doesn't have the motor wires. What do I need to purchase so I can plug the 6.5 wires into the connectors on the ESC.
